The best samgyeopsal in Seoul is spread across a few neighborhoods: Yaksu/Sindang for thick bone-in pork belly (Geumdwaeji Sikdang, Michelin Bib Gourmand), Sinseol-dong and Gangnam for staff-grilled extra-thick cuts (Yukjeon Sikdang), Mapo for old charcoal pork houses, and Hongdae for many cuts at once. On Jeju, eat aged Jeju black pork. Pick the area you're staying in — every place below is easy to reach by subway or taxi.

How to choose
- First time, or with older family? Go where staff grill for you (Yukjeon Sikdang) — the meat comes out right and you just eat.
- Want the famous one? Geumdwaeji Sikdang — but go before peak dinner time and register at the machine.
- Want the local, smoky feel? Mapo's old pork houses.
- Only one BBQ meal on Jeju? Make it black pork.
Ordering in 10 seconds
- Most places need at least 2 servings per table: "Samgyeopsal i-inbun juseyo" (삼겹살 2인분 주세요).
- Side dishes and lettuce are free and refillable — point and say "Yeogi jom deo juseyo".
